Hummingbird Pastaria is owned and operated by Patrick and Sally Halloran along with their daughter, Morgaine.  The Halloran's opened the restaurant in early March 2014 .


As the chef and owner, Patrick Halloran’s emphasis on rustic and peasant style cuisine has made Hummingbird Pastaria’s table one of the communities favorite places to dine. As a from scratch kitchen, every fresh pasta, as many as 8 different kinds are rolled out every morning.


Halloran strives to work with local partners to bring fresh ingredients to the community. He has developed relationships with local family farms that personally deliver whole hogs (Olive Branch Beef, Sequatchie Valley) and lamb (3Hills Farm, Sequatchie Valley) which are processed in house and utilized throughout the menu.

Halloran brings a dynamic culinary experience that he is excited to share with the Signal Mountain community. Including Bacaro Venetian Tavern (executive chef) in Boulder, Colorado, Texas Coffee Traders (executive chef), Vespaio Enoteca (sous chef) and Lamberts (sous chef) in Austin, Texas, Logan (sous chef), and Zingerman's Community of Businesses in Ann Arbor, Michigan.

Hummingbird Pastaria is a family-run neighborhood trattoria, serving fresh, no brow rustic fare

to the Signal Mountain community.
